Everything at Rosell Boher is done on a small scale and entirely by hand, from harvesting the grapes, grown in the Uco Valley at approximately 1,300 metres ASL - an ideal location for making the perfect base wines - to riddling and disgorging. It's a bit like going back in time or visiting a long-lost cousin of the great Champagne Houses. All of the wines are, of course, produced in the traditional method with a second fermentation in bottle, and all of the wines, even the most accessible price-wise – Casa Boher Extra Brut – enjoy extensive lees ageing in bottle, a minimum of 18 months and up to 5 years or more for the very top-end wines. Rosell Boher Rosé and Encarnación both have a minimum of 24 months. These are fantastic wines!
